Small talk about food design

In 1923 researcher Bronisław Kasper Malinowski published an essay The Problem of Meaning in Primitive Language, where he demonstrated the interest of small talk to satisfy a fundamental need of man : camaraderie. Small talk plays an essential role in social relations.

STORY TO TELL ABOUT FOOD DESIGN

My conversation with Germain Bourré made me want to share my expertise in food design. If people understand the work of the photographer and the culinary stylist, how to recognize the work of a food designer ?

We know space design (interior, urban, museum..) graphic design, product design (styling, furniture). Why not food design? At the crossroads of design, cooking and art, if one of these 3 components is missing then it is not about culinary design. A chef painting on a table, or collaborating with an artist to offer a gastronomic experience is cooking or art. Culinary design questions the industrial, artisanal, event or gastronomic dimension. It aims to create meaningful experiences at different levels. The designer can work on the food object itself, on the cooking of a product, the presentation, the staging or the tasting of a dish.

INDUSTRIAL APPLICATION

This is not a fork but a Georgette. This hybrid cutlery was invented by Jean-Louis Orengo, a French naturalist exploring Canada. Adopted by some Michelin starred chefs, Georgette has been at the  table of Elysée since 2016.

CRAFTMANSHIP APPLICATION

In 2008 Julien Madérou challenged Poilane bread. He carefully chose & cut specific pieces to make the bread  easier to contain food, soak or spread.

EVENT APPLICATION

The event designed by Hopla celebrates the 150th anniversary of the inauguration of the Suez Canal. The cocktail draws its inspiration from the archives of the menu and the party attendees on November 17th, 1869.

GASTRONOMIC APPLICATION

Whatever the positioning of the restaurant, the gastronomic experience ensures coherence between the dish, the tableware, the decoration of the place, the tasting ritual and the personality of the chef.
