STORY TO TELL ABOUT TAJINE

My conversation with Assya Van Gysel, co-founder of TEDx Saclay, made me want to know more about tajine, her favorite dish. Let’s discover this story you can tell as if you knew Moroccan culture by heart.

TAJINE : STAR OF MOROCCAN CUISINE

Emblematic of North African cuisine, tajine’s origin is controversial. Is it inherited from Roman antiquity, Berber culture or Arab cuisine? Anyway the word « tajine » derived from the Greek « têganon » means earthenware dish. Traditionally made of clay, we also find cast iron tagines.

The conical shape of both the dish and the cookware allows for slow cooking. Result? Melting and caramelized foods… No need for fat or water, the magic operates through patience. Regular watering of food is done autonomously through condensation of water vapor. If spices, herbs, dried fruits and vegetables vary according to the nature of the cooked meat, the traditional tajine with seven vegetables is as tasty.

True praise for the slowness to take the time to confire all the food, the emblematic spices of Morocco that are cumin, turmeric, ginger or saffron make us travel. Subscribers have received the recipe of traditional tajine by email.
